Commercial airliners go around 800 km/h? So that's 1600km/h respective to the other plane.

Meanwhile, an F22 can do Mach 1,82 without using afterburners, which is around 2500 km/h.

Would the de-accelleration induce g-forces as well? Or is the breaking a lot slower than the acceleration?

Most de-accelaration happens in tight turns and acrobatic maneuvers. And yes, negative G's fuck you up more than positive G's.
